This is an awesome, cool, can-be-made-the-night-before-and-only-gets-better-marinating-in-the-fridge-overnight recipe! Grab a bag of tostado chips, a group of friends, and serve chill!
And by the way, it’s very elegant and delectable over home-made tacos as well! Here’s to the easy recipe!
1/2 red bell pepper
1/2 green bell pepper
1/2 red onion
1/2 cup Kernel corn
1/4 cup cilantro
3/4 cup black beans
3/4 cup pinto beans
3/4 cup white beans
1/2 cup green mango (not ripe)
Dice up all these ingredients (except the corn since it’s small enough) then add:
3-4 tablespoons red wine vinegar
3 tablespoons Dijon mustard
Squeeze of lime
1/2 teaspoon of salt, to taste
Let this all cool and marinate together in the fridge for 3 hours (or overnight for even better taste). Yum!
